Rosehip/roseberry soup
4 servings
Ready in 20 mins
2 dl dried rosehips/roseberries/nypon
1 l water
0,5 vanilla stick(?)
0,5 tbs potato flour (starch)
0,5 dl sugar (depending on the berries in themselves=
Lemon peel
Do this:
1. Soak the berries for a while
2. Wash the lemon thoroughly and grate the peel of half of it.
3. Cook the hips in half the amount of water along with vanilla and lemon peel, about 5-15 minutes, until the berry peel has softened.
4. Then mix it all in the blender and then press it thru a siever.
5. Boil the remaining amount of water along with the sugar.
6. Stir in the mix and dissolve the potato starch into it.
7. Serve cold or hot, along with whipped cream/vanilla icecream and sweet crackers.
I have a vague memory of having to wait with harvest til the first frost. But I leave that unsaid. The berries are dried in the oven at low heat. Good luck!
